Stuffed Jack-O-Lantern Bell Peppers
It’s that time of year when I get to start using some of my favorite fall and Halloween recipes, yay! Stuffed bell peppers are my favorite, and these stuffed bell peppers are the best cause they are also adorable little jack-o-lanterns. I look forward to making them every year. Chris isn’t a fan of bell peppers, and that’s okay because MORE FOR ME.
You’ll need:
4 orange bell peppers
1 lb. ground turkey
1 packet of taco seasoning
1 can black beans
1 can corn
1 can petite diced tomatoes
Shredded cheese
Garnish:
Sour cream
Avocado
Salsa
Let’s get started:
Preheat oven to 375 degrees.
Cut and prep your bell peppers. I like to brown the turkey while I prep the peppers.
Once your peppers are cleaned out, you can carve the face. I use a small sharp paring knife. Get creative! You will not regret taking a little time to make them extra cute.
Once you have carved your pumpkin faces, bake the empty bell peppers in the oven for about 10-15 minutes.
Drain the corn and black beans (rinse the black beans).
Add the taco seasoning, black beans, corn, and tomatoes (w/juice) to turkey.
Simmer together until everything is hot and yummy
Now spoon the mixture in your bells! They should be warm/hot from their first round of cooking. It’s okay if some of the mixture comes out of the face.
Add cheese on top and bake for 20-30 minutes. I keep an eye on them after about 15 minutes.
Once they look melty and cooked to your liking, garnish with sour cream, avocado and salsa. YUM.
