Fruit Pizza

This fruit pizza is our new jam. I made one in the shape of an egg for Easter, and for some reason I only used red and blue berries. It ended up looking like a cute Fourth of July Easter egg. So that’s how we got here. This is the perfect treat for your next summer BBQ!

Let’s get started! 

Ingredients:

  • 1 package pre-made sugar cookie dough

  • 8 oz cream cheese, softened

  • 2 tbsp powder sugar

  • 1/2 tsp vanilla

  • 1/2 cup strawberries, chopped

  • 3 cups fruit, sliced (strawberries, blueberries, blackberries)

Preheat oven according to sugar cookie instructions and grease baking sheet or pizza pan. 

Step 1:

Prepare sugar cookie dough. If you are making it, follow the instructions on the box. If it’s premade, you’re ready to start rolling. 

Step 2: 

Roll out the dough on parchment paper for easy transfer to the pan. Bake for 10-15 minutes, until golden brown. Let cool completely, about 30-45 minutes. Now cut your shape! I love trying cute mini shapes. You can get as creative as you want with this. Make a pizza, a flag, a star, or a random summer egg like me. Minis are super CUTE too.

Step 3:

In a food processor or blender, add the softened cream cheese, 1/2 cup chopped strawberries, powdered sugar and vanilla. Blend until mixture is fully combined and as smooth as possible. Mine has had some little chunks before, which is fine. No one will see. 

Step 4: 

Spread cream cheese mixture onto the cooled cookie. 

Step 5: 

Now get to decorating! Once again, have as much fun as you want with this. I love being extra and getting the small cookie cutters out to cut the fruit into cute shapes. 

Step 6: 

Slice and serve. This is best served same day. Keep cool until eating. 

Aren’t you proud? Wait til you taste it. I add kiwi to make it less patriotic, but for Memorial Day, 4th of July or President’s Day, go wild with the red, white and blue.
