Dill Pickling
This recipe is kind of a big DILL around here. LOL yes, I said that. I had to!
You can use this dill pickling recipe for lots of different garden veggies, like carrots, peppers, green beans, okra and of course, cucumbers. The pictures I used below show a jar of homegrown okra, but I usually make this recipe with cucumbers to make the most perfect dill pickles! I love dill-pickled anything. :)
Let’s get started!
Ingredients:
2 cups vinegar
1/2 cup salt
1 quart (4 cups) of water
1 garlic clove per jar
1 tbsp dill seed or one large spring of fresh dill per jar
(Dill flower works best but is hard to come by)Your vegetable(s) of choice
Step 1:
Pack the jars. Since I’m using homegrown okra, I only have one jar. But I usually make multiple jars at time! These are great gifts.
First, prepare your veggies. For okra, trim the tops to fit. For cucumbers, slice them into your preferred shape. You can do spears, slices or whole pickling cucumbers.
Pack the jar tight. Add garlic and dill to each packed jar. If I’m not using fresh dill, I like to sprinkle a little dried dill in there too.
Step 2:
Add water, vinegar and salt to a large pot and bring to boil. Stir until salt is dissolved. Pour the boiling mixture into the jars. A glass pitcher or glass measuring cup works well for this step.
Step 3:
Secure the lids tightly, set the jars in the back of the fridge, and forget about them for THREE LONG weeks. Sometimes I open them sooner, when I’m feeling rebellious.
Step 4:
ENJOY THE HECK OUT OF THESE.
There’s just a different sort of pride you get from making things for yourself! I hope you’re proud of yourself, cause I know I was when I made my first jar. It’s a big DILL, okay.
