Strawberry Pop-Tart Love Letters
I LOVE to make seasonal pop-tarts! I’ve shared my blueberry and pumpkin pop-tart recipes with you guys in the past. This is the same concept, just a different shape and flavor.
Here is this season’s take on my DIY pop-tart! Say hello to the cutest little strawberry love letter you’ve ever seen.
You’ll need:
1 box refrigerated pie crust
2 tablespoons strawberry preserves
1/4 cup thinly sliced strawberries
1 teaspoon corn starch
2 tablespoons milk
1 teaspoon sugar
Mini heart cookie cutter (you can hand cut hearts if you don’t have a cutter handy)
Optional garnish: thinly sliced strawberry with whipped cream
Step 1: Preheat oven to 375 degrees. Line a baking sheet with parchment paper for easy clean up. Cut 4 (4-inch) squares of foil and spray them with cooking spray.
Step 2: Unroll pie crust and roll it out. Cut each crust into a 6-inch square. Repeat with both pie crusts until you have four 6-inch squares. Use the excess dough to cut mini hearts (at least 3).
Step 3: In a small mixing bowl, gently toss together the strawberries, preserves, and cornstarch.
Step 4: Turn each square of dough to the right 45 degrees to make a diamond. Spoon a quarter of the strawberry mixture into the center of the dough. Fold bottom point over the strawberry mixture. then fold with the right and left points toward the center. Brush the dough with milk. Leave the top unfolded.
Step 5: Sprinkle each love letter with 1/4 teaspoon sugar. Use sparkling sugar if you have it. I did not. LOL.
Step 6: Bake until the love letters are golden brown, about 18-20 minutes. After 10 minutes, cover the unfolded points loosely with the prepped foil squares. This will prevent them from overbrowning. I bake my hearts separately and while the strawberry mix is still bubbly, I place a heart in the center where all points meet and 1 one each side, or wherever you want! Get creative <3
If you’re feeling fancy, garnish with thing sliced strawberries and whipped cream! I always add whipped cream...TO EVERYTHING. Hehe.
