Overnight Hashbrown Casserole

This overnight hash brown casserole is a delicious way to simplify your Christmas morning menu. I learned about overnight breakfasts last year, and they’ve changed my breakfast game!

This casserole is perfect for Christmas morning, or any other morning celebration on your event calendar. You can make it the night before and refrigerate or make it in the morning and pop straight into the oven.

I love hashbrowns so much – a big breakfast just isn’t complete without them. They are the perfect savory addition to pancakes, French toast and fruit.

Ingredients

  • 1 bag frozen, shredded hash browns

  • 1/2 cup melted butter

  • 3 cups of Colby jack cheese

  • 1 1/2 cups cubed ham or other breakfast meat

  • 8 large eggs

  • 1 1/3 cup heavy cream or evaporated milk

  • 1 teaspoon seasoned salt

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/4 teaspoon dry mustard (optional)

  • 1/4 teaspoon onion powder (optional)

First, preheat oven to 400 degrees.

Step 1. Grease a 9x13 inch pan and fill with the full bag of frozen hashbrowns.

Step 2. Melt butter and pour over frozen hashbrowns. Sprinkle with salt and pepper.

Step 3. Bake buttered hashbrowns in the oven until crispy, about 25 minutes. Let cool.

Step 4. Remove from oven and top with a layer of cheese.

Step 5. Dice ham and add to dish. You can layer it on top of the cheese or gently toss to combine ham and cheese. Either way is fine!

Step 6. Cover tightly and chill in the fridge overnight.

Step 7.  In a large bowl, mix eggs, cream, seasoned salt, kosher salt, pepper, dried mustard, and onion powder. Cover and place in fridge overnight. If you prefer to do this step in the morning, that’s fine too.

When ready to bake, preheat oven to 350 degrees.

Step 7. Whisk egg mixture once more and pour over hashbrowns. Bake uncovered for 45-55 minutes.

It’s done when the top is bubbly and the edges are browned. Shimmy the pan a little – if there is any wiggle, give it a couple more minutes. If the edges start to brown too much, cover with foil for the last few minutes of baking.
