Guilt-free Watermelon Slushies
Summer is here, and it’s hot as hell. I recently bought two snow cone machines – a hand crank (the one we use every day) and an electric one (for when we need to make a big batch). For a quick treat, I like to pour fruit juice or lemonade over the ice and turn it into a yummy slushie.
We eat slushies in some form almost every day, so we don’t use normal snow cone syrup. If we did, I wouldn’t be able to sleep at night knowing the amount of sugar in just one serving. This recipe is a delicious and healthy alternative, and you don’t need a snow cone maker to enjoy it!
Let’s gather the ingredients.
You’ll need:
Half a medium watermelon
Juice of 1 lime
1/3 cup honey
A blender or food processor
Step 1: Clean out your watermelon. Add chunks, lime juice and honey to the blender. Blend until smooth.
Step 2: Pour watermelon mixture into a 9x9 or 9x13 baking dish. Place in freezer for an hour.
Step 3: After an hour, using a fork, scrape the frozen areas of the slush until broken apart. Continue scraping the slush with a fork every hour. The watermelon mixture needs to be frozen for 4-5 hours before serving. Forking it gives it the slush texture we all crave.
Step 4: Transfer to your favorite insulated cup and enjoy.
