Easy Peach Cobbler
This peach cobbler is easier than pie! LOL, pies are actually pretty easy if you cut corners like I do. Refrigerated pie crust, anyone?
But seriously, I was shocked when Sheila and I made this easy peach cobbler. It is so delicious. I had to share with you guys.
Ingredients:
2 cups peaches (if frozen, thaw and drain juice)
¼ cup butter
½ cup flour
1 cup sugar, divided
¼ cup brown sugar
1 tsp baking powder
¼ tsp vanilla
½ tsp cinnamon
Ice cream for serving
Step 1: Preheat oven to 350 degrees. Melt butter in the bottom of the dish while the oven preheats.
Step 2: Mix flour, 2/3 cup sugar, baking powder and salt in a large bowl. Stir milk and egg into the dry ingredient mixture.
Step 3: Pour batter into the baking dish over the melted butter. DO NOT STIR. That is important.
Step 4: In a separate bowl, pour remaining 1/3 cup sugar, vanilla and cinnamon over peaches. Gently stir/fold to combine.
Step 5: Spoon peach mixture over the batter. DO NOT STIR. Lol, it’s hard not to.
Step 6: Sprinkle brown sugar over the top.
Step 7: Bake for 40-45 minutes or until peaches are bubbly and crust is golden brown.
This peach cobbler is best enjoyed straight out of the oven with a scoop of your favorite vanilla ice cream! If you have leftovers, cover and store in the fridge for 2-3 days.
It is peach season, so if you use fresh peaches, you can peel them or leave them as-is depending on your preference. This recipe also works great with frozen mixed berries or just berries in the fridge that are on the verge of sadness.
