Corn Casserole
This is one of my favorite side dishes and its perfect fo the holidays!
The best way I can describe this dish is...corn bread on steroids. But in a good way. It’s the perfect texture, and you can actually swallow after taking a bite. LOL. I love corn bread, BUT unless it’s served with beans or a pound of butter, it’s just too dry for me.
You’ll need:
1 can of whole corn kernels
1 can cream style corn
8 oz sour cream
1 stick of margarine (softened)
2 eggs
1 box Jiffy Cornbread mix
An 8x8 baking dish or pan works best!
For BBQs, potlucks, and EVERY Thanksgiving, I double this recipe. It’s a crowd pleaser for all ages. If you double the recipe, use a larger dish (I use a 2 quart baking dish) and double the time in the oven.
Step 1: Preheat oven to 400 degrees.
Step 2: Put everything in a large bowl and mix together.
Step 3: Grease your baking dish.
Step 4: Pour into your pan.
Step 5: Bake for about 35 minutes. Do a toothpick test before removing from the oven.
