Artichoke Butter

I love artichokes so much; I have since I was kid. I actually have some gross artichoke stories, like the time I steamed an artichoke only to find that it was full of dead ants! Or the time I went to a local, bougee, Greek restaurant and found an earwig hiding in the petals. 

Bug trauma aside, artichokes are still my favorite. But both of those stories are a testament to the fact that you should always thoroughly inspect and clean your artichokes prior to preparing them. 

Okay, time for the recipe! Start by cleaning and trimming your artichokes and steaming them for an hour. You can also boil them, but boiling removes some of the nutrients – and we need those nutrients to make up for all the butter you’ll be ingesting later.  

I usually start the butter when there’s about 15 minutes of steaming time left. This recipe makes enough butter for 2 large artichokes.

Ingredients

  • 2 sticks salted butter

  • 4 green onions (thinly sliced) 

  • 1/4 cup feta crumbles 

  • 1 tablespoon minced garlic

  • 2 tablespoons lemon juice 

  • Parmesan cheese, for garnish

  • Add salt if using non-salted butter

Step 1.

Turn your stove to low-medium heat and melt butter in a saucepan. 

Step 2.

Once the butter is melted, add green onions, feta crumbles, minced garlic, and lemon juice. The butter shouldn’t sit on the stove longer than 15 minutes – after 15 minutes, the onions wilt and the butter may start to brown.

Step 3.

Now that the butter and artichoke are ready, ENJOY! You can pour the butter into a shallow bowl and set the artichoke in the butter, or you can serve butter in a small dish and dip each petal. 

This is one of my favorite things to eat. Sometimes I enjoy as a meal or have it as a side!
