Apple Pie Oatmeal Cookies
Wanting to make the best oatmeal cookie ever? You’ve found the spot. I never knew of my love for oatmeal cookies until recently, when I decided to make some from scratch. That’s when I discovered that I could eat a dozen like nothing. LOL, I just see it as a bowl of oatmeal. Am I right? Apples and cinnamon were perfect additions to this recipe and really bring the fall vibes. These apple oatmeal cookies are soft, chewy, and full of fruit.
First, preheat oven to 325 degrees and line a baking sheet with parchment paper. Then grab your ingredients!
Ingredients:
1 cup instant oats (can use gluten-free)
3/4 cup flour (can use gluten-free)
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
Pinch of salt
1tbsp coconut oil
1 large egg
1 tsp vanilla
1/2 cup agave
1 cup finally diced red apple or about 1 medium apple
Tip: It’s important to measure the flour and oats accurately. Spoon them into the measuring cup instead of scooping from the bag.
Step 1. Mix oats, flour, baking powder, cinnamon and salt in a medium bowl. In a separate bowl, mix coconut oil, egg and vanilla. Stir in the agave.
Step 2. Add flour mixture to wet ingredients, stirring until just mixed. Fold in diced apple.
Step 3. Chill for 30 minutes. Don’t skip this step – the agave needs time to chill.
Step 4. Drop cookie dough into 12-15 rounded scoops onto your baking sheet. You may need to flatten them slightly.
Step 5. Bake for 13-15 minutes. Allow cookies to cool on baking sheet for 10 minutes before moving to the cooling rack.
