Smashed Potatoes

This is one of my favorite side dishes. It’s easy and so YUM. I hope you enjoy!

I usually use about 5-6 smaller red potatoes. You’ll want to pick potatoes that are similar in size. This feeds Chris and I with some leftovers.

Boil the potatoes for about 20-25 minutes or until they are fork tender.

While potatoes are boiling, preheat over to 425°.

Remove potatoes from water & pat dry with a towel. This helps them crisp up in the oven! Immediately after you dry them, transfer to an oiled baking sheet.

Gently press each one down using a potato masher or large fork on the center of the potato, but don’t completely mash it. Try to keep the potato in one piece. See pics below.

Next, make the garlic butter:

Garlic Butter

4 tablespoons butter, melted

3 cloves garlic

1 teaspoon lemon juice

Drizzle the garlic butter over each potato and top with Parmesan or your preferred cheese.

Bake in preheated oven for 20-25 minutes.

Garnish with green onion, sour cream and bacon if you want them loaded.
