Red Hots Sweet Potatoes

YUM

This is yet again, another family secret that I’m sharing with the world. This one comes from my Aunt Connie, may she rest in peace. She was a great cook and very creative. She would be honored for me to share this recipe in my creative space. She was a champion scrapbooker! Do you kids even know what a scrapbook is? LOL JK, moving on.

First off, this is not a healthy sweet potato recipe. Sorry ‘bout it. LOL, but they are so delish and worth every damn bite.

Let’s get started!

You’ll need:

  • 4 medium sweet potatoes, peeled and quartered

  • 1/2 cup sugar

  • 1/4 tsp salt

  • 1/2 bag of Red Hots candies

  • 1/2 stick melted butter

Step 1: Using a large pan, melt the Red Hots in about 1/4 inch of water or less.

Step 2: Add in melted butter, sugar, and salt. Stir until dissolved.

Step 3: Drop in quartered potatoes. Let cook for about 2-5 minutes on high.

Step 4: Turn down to simmer/low heat. Cover and cook until tender, about 30-40 minutes, stirring occasionally to avoid burning. The time really depends on the amount and size of the sweet potato chunks.

Step 5: Uncover and let thicken for about 5-10 minutes.
ENJOY your Red Hots sweet potatoes. This is one of my most favorite Thanksgiving sides.

Hope you are having the best autumn season.

Thankful for you!

Always and Whatever
