Mini Stuffed Apple Pies

This is my new favorite dessert, and it’s perfect for this time of year. If you’re new here, I LOVE DESSERT. Any kind, really. These mini stuffed apple pies are cute, easy, and so delicious!

Ingredients:

  • 4 Granny Smith apples

  • Pie crust (store bought)

  • 1/4 cup honey

  • 2 tsp. cinnamon

  • 1 egg for egg wash

  • Cinnamon sugar blend

  • Melon baller

Preheat oven to 350 degrees. 

Step 1: 

Slice the tops off the apples and remove the core and fruit using a melon baller. You will want to scoop until the walls of the apple bowl are about 1/8-1/4 inches thick. Discard apple cores and place scooped apple pieces into a bowl. 

Side note: The thickness of your apple bowls should be about the same, so they bake evenly.

Step 2:

Warm honey in the microwave for 10-15 seconds. Stir cinnamon into warm honey.

Step 3:

Pour honey and cinnamon over apple pieces. Stir until evenly coated. 

Step 4: 

Once coated, distribute apple pieces evenly between the four apple bowls.

Step 5: 

Unroll pie crust and cut into 1/8-1/4-inch strips. Weave the strips on top of the apples to create mini pie crust lattices!

Step 6: 

Brush pie crusts with egg wash and sprinkle cinnamon sugar mix over the tops. 

Step 7: 

Bake for 30-45 minutes. I personally like a little crunch in my apples, so I baked them for 35 minutes. If you prefer to have no crunch, go closer to 45 minutes. You’ll want to keep a close eye on them so the crust doesn’t burn in the last few minutes.

Step 8: 

Allow pies to cool (a little). Add a scoop of your favorite vanilla ice cream and caramel syrup on top! 

Okay, I’M DROOLING! These are so fun and easy. I showed my grandma, and she said, “Looks easier to make a pie!” But these were faster because I didn’t have to slice so many apples. These mini apple pies are adorable and much easier than they look!
